In this cooking demo and talk at Maine Health Learning Resource Center in Falmouth, you will not only sample exotic flavors, but also learn how to prepare easy and nutritious meals your whole family will like. We will learn how to adapt favorite international recipes to make them healthier and teach you strategies for making healthy choices when eating out at ethnic restaurants. Cooking Class and Dinner Inspired by "Babette's Feast"

Inspired by the Portland Stage production of Babette’s Feast, which tells the story of how a refugee transforms a community by sacrificing all she has to throw a lavish dinner party, Immigrant Kitchens is offering this cooking and dinner event. A group of up to 20 guests will cook the favorite meal of Iranian refugee, Parivash Rohani, and share dinner together. The meal (gluten-free) features pomegranate walnut sauce, saffron infused rice, crispy potatoes, and salad of tomato and cucumber with mint and sumac. Parivash Rohani is Iranian refugee, who has worked as a nurse in the U.S. for decades, raised a family, and been an activist supporting human rights. 

Please bring whatever you would like to drink other than water, as well as a baseball cap to cover your hair (this is a professional kitchen with many food businesses working here - thank you). Let me know of any food allergies or diet restrictions at least three days in advance of the class. If the cost of the class is prohibitive, contact Immigrant Kitchens as sponsored tickets may be available.

 In this class, 20 guests will learn the secrets to making Taiwanese San Bei Ji, a delicious chicken and rice dish with shaved ginger, scallions, and Thai basil, in a sesame-soy sauce. This event can easily be gluten-free on request (please let Chef know when you buy ticket). Please bring a baseball cap or something to cover your hair, and whatever you'd like to drink besides water.

In this hands-on class, you'll learn the secrets of two natives in making pad Thai and spring rolls. Ingredients: rice noodles, rice paper, mint, thai basil, cilantro, lime juice, garlic, thai chilis, shallot, egg, onion, fish sauce, peanuts, bean sprouts, shrimp, chicken, sugar, distilled vinegar. The evening is gluten-free, and can be vegetarian on request (please let us know when purchasing ticket). Everyone will gather round the kitchen island and take part in a tradition of making the dough out of milk, egg, and flour, and turning it into bite-sized pierogi. Bring whatever you like to drink and an apron if you like. Cooking Class: Chinese Spicy Chicken

Learn to cook an authentic dish from around the world with Chef Lindsay Sterling. In this class, up to 6 guests will come together in Chef Sterling's home kitchen to learn the secrets to making Chinese spicy chicken, an exciting dish from the Sichuan province of China that has grown to become a favorite in Chinese-American restaurants. Chef Sterling learned this authentic version from a Chinese neighbor and her friend who is from Sichuan province. Ingredients: Sichuan peppercorns, peanuts, garlic, ginger, fermented chili-bean paste, dried chili peppers, chicken, rice wine, corn starch, egg white, black vinegar, soy sauce, salt, green onions, green pepper, peanut oil, rice. The dish can be made gluten free with some substitutions - please let the chef know if you eat gluten-free when you sign up. Bring whatever you like to drink and an apron if you like. I will be doing a free, lunch-time talk at Portland Public Library, entitled: "Maine Immigrant Kitchens: A Chef’s View." The event is sponsored by the 30th Annual Camden Conference. Their theme this year is: "Refugees and Global Migration: Humanity’s Crisis." I'll share my unique perspective on immigration after cooking with immigrants from over 60 countries in Maine.
