Cooking Class: Pad Thai and Spring Rolls

In this hands-on class, you'll learn the secrets of two natives in making pad Thai and spring rolls. Ingredients: rice noodles, rice paper, mint, thai basil, cilantro, lime juice, garlic, thai chilis, shallot, egg, onion, fish sauce, peanuts, bean sprouts, shrimp, chicken, sugar, distilled vinegar. The evening is gluten-free, and can be vegetarian on request (please let us know when purchasing ticket). Cooking Class: Mexican Stuffed Poblanos

In this class we'll be making two famous Mexican dishes. Chiles en nogada is poblano peppers stuffed with pork, apples, plantains, and thyme, served with a walnut cream sauce. Chiles rellenos (vegetarian) is poblano peppers stuffed with cheese and served with a tomato sauce. Everyone will learn to roast and clean peppers, improve their knife skills and frying skills, and get the seeds out pomegranates easily, among other cooking techniques. This is a hands-on class. Please bring a hat to cover your hair (we will be in a professional kitchen where this is mandatory), and what you would like to drink besides water.

 In this class, 20 guests will learn the secrets to making Taiwanese San Bei Ji, a delicious chicken and rice dish with shaved ginger, scallions, and Thai basil, in a sesame-soy sauce. In this class, up to 16 guests will learn the secrets to making two varieties dumplings from Poland: sweet cheese and potato onion. Everyone will gather round the kitchen island and take part in a tradition of making the dough out of milk, egg, and flour, and turning it into bite-sized pierogi. Bring whatever you like to drink and an apron if you like. Cooking Class: Chinese Spicy Chicken

Learn to cook an authentic dish from around the world with Chef Lindsay Sterling. In this class, up to 6 guests will come together in Chef Sterling's home kitchen to learn the secrets to making Chinese spicy chicken, an exciting dish from the Sichuan province of China that has grown to become a favorite in Chinese-American restaurants. Chef Sterling learned this authentic version from a Chinese neighbor and her friend who is from Sichuan province. Ingredients: Sichuan peppercorns, peanuts, garlic, ginger, fermented chili-bean paste, dried chili peppers, chicken, rice wine, corn starch, egg white, black vinegar, soy sauce, salt, green onions, green pepper, peanut oil, rice. The dish can be made gluten free with some substitutions - please let the chef know if you eat gluten-free when you sign up. Bring whatever you like to drink and an apron if you like. World Refugee Day Cooking Class

In honor of this day, June 20th, being World Refugee Day, this is a special cooking class that raises awareness about what the United Nations is doing and how we can help refugees. On this evening, we'll cook a refugee's favorite dish from his or her homeland together as a group in the professional kitchen at Fork Food Lab, enjoy a delicious dinner, and learn a little bit about the UN-HCR. I hope people leave having found one thing, small or large, they can do in their own lives to help those who are experiencing the unimaginable. Please let me know of any food allergies or diet restrictions at least three days in advance of the class. Bring whatever you would like to drink other than water, and a baseball cap to cover your hair (we will be in a professional kitchen with many food businesses working there). Free Lunchtime Talk at Portland Public Library

I will be doing a free, lunch-time talk at Portland Public Library, entitled: "Maine Immigrant Kitchens: A Chef’s View." The event is sponsored by the 30th Annual Camden Conference. Their theme this year is: "Refugees and Global Migration: Humanity’s Crisis." I'll share my unique perspective on immigration after cooking with immigrants from over 60 countries in Maine.
