Cooking Class: Mexican Stuffed Poblanos

In this class we'll be making two famous Mexican dishes. Chiles en nogada is poblano peppers stuffed with pork, apples, plantains, and thyme, served with a walnut cream sauce. Chiles rellenos (vegetarian) is poblano peppers stuffed with cheese and served with a tomato sauce. Everyone will learn to roast and clean peppers, improve their knife skills and frying skills, and get the seeds out pomegranates easily, among other cooking techniques. This is a hands-on class. Please bring a hat to cover your hair (we will be in a professional kitchen where this is mandatory), and what you would like to drink besides water.
