This is the yuca root...

You peel them and boil like potatoes
This is the tapioca starch - kind of like corn starch but derived from the yuca root above!

this is what the cunape dough looks like:
Here is a piece of cooked yuca when it's done - see the edges cracking?


You drain them, pull the inner fibers out with your fingers, and then mash:

The cunapes all lined up ready to puff up in the oven:

This is what they look like when they're done - delicious!
